Fresh Green Smoothie (フレッシュ グリーン スムージー)


Ingredients
2 limes
1 orange
1 apple
1 banana
3 leaves of kale
1/2 inch of ginger
1 cup of ice


1. Squeeze limes into a blender.
2. Peel orange and banana. Then, chop all fruit and vegetable.
3. Add orange into the blender. Blend lime juice and orange. (Blend juicy fruit first.)
4. Then, add banana, apple, kale, and ginger. Blend them.
5. Add ice and blend them.
6. Enjoy!

Recipe : Creamy Pumpkin Salad (クリーミーなかぼちゃのサラダ)


Creamy Pumpkin Salad (クリーミーなかぼちゃのサラダ)


Ingredients

a whole kabocha (cut into 1/8)
8oz of cream cheese (cut them into half inch dice)
6 tablespoons of mayonnaise
sugar (as you like)
raisin (as you like)


1. Place kabocha onto a plate and cover it with plastic wrap. Heat it in a microwave oven for over four minutes until kabocha gets tender. Peel its skin.

2. Divide kabocha in half. Mash one half of kabocha, and cut the other half of kabocha into half inch dice.

3. Mix mashed kabocha, cream cheese and mayonnaise gently. Then, add sugar as you like. Mix the rest of kabocha and raisin lightly.

4. Enjoy!

Aguas Frescas de Limon Con Chia, Lime Water with Chia Seeds - Fresh Mexican Drink


Lime Water with Chia Seeds


Ingredients

1 tablespoon of chia seeds and 1/2 cup of water
10 fresh mint leaves
2 limes
2 teaspoons of sugar
1 cup of water




      1. Mix chia seeds and water.



     2. Stir them and sit them for 10 minutes or so.


     3. Mince flesh mint leaves.



     4. Cut limes into 1/4 and squeeze them into a cup. You can make some sliced limes.

     5. Add sugar and stir them thoroughly until sugar dissolves. Add ice and sliced limes.


     6. Add fresh minced mint leaves.


     7. Add chia seed water.


     8. Then, add water into it, and stir them thoroughly.


      9. Enjoy!

Easy Tomato Risotto  (簡単トマトリゾット)



     Ingredients

・ 2 servings of cooked rice
・ two tomatoes (cut them into dice)
・ 1 Tablespoon of crushed garlic
・ your favorite ham
・ 1 cup of milk
・ 1 cup of water
・ nip of salt
・ 1/2 of shredded cheese
・ some chopped parsley



      1. Heat oil into a pan over high heat. Add garlic and tomatoes and fry them for five minutes or so.
      2. Add cooked rice, water, milk, ham, cheese and salt. Reduce heat to low and simmer for five minutes.
      3. Serve it in a bowl and put chopped parsley on it.
      4. Enjoy!

Healthy Tomato Soup (ヘルシートマトスープ)

     Ingredients
・ 28 oz of canned crashed tomatoes (794g)
・ two canned chunk light tuna in vegetable oil
・ three potatoes (cut them into half inch dice)
・ three sticks of celery (cut them into half inch dice)
・ one onion (cut them into half inch dice)
・ two tablespoons of crushed garlic
・ one cube of bouillon
・ 3 cups of water
・ some crushed fresh parsley



     1. Heat vegetable oil, which is from canned tuna, in a pressure cooker over high heat, and stir-fry onion and garlic thoroughly.


     2. Add potato and celery, and stir-fry them.


     3. Add canned tomato, canned tuna, water and bouillon.



     4. Cover the lid. When it the pot is fully with pressure, reduce heat to low and simmer for 15 minutes. Then, turn off the heat. Wait until it naturally deflates completely.


     5. Add salt and pepper as you like.


     6. Put the soup in a bowl, and add parsley.


     7. Enjoy!

Recipe : Stir-fried Fuki (フキの炒め物)


Stir-fried Fuki - フキの炒め物


     Before cooking, you need to do aku-nuki, which is harshness removal.
1. Rub fukis with plenty of salt.
2. Let fukis sit for an hour.
3. Boil fukis with salt for a minute.
4. Then put them in cold water.
5. Peel the skin.


     After aku-nuki, you are ready to cook them.


 Ingredients

1 tablespoon of oil
1 lb of fukis (cut them into an inch)
4 tablespoons of sugar
4 tablespoons of soy sauce


1. Heat oil in a pan over high heat, and stir-fry them.
2. Add sugar and soy sauce, and stir them until water evaporates.
3. Enjoy!

Recipe : Stir-Fried Celery with Egg and Dried Shrimp (玉子と海老のセロリ炒め)


I first cooked it years ago by referring this recipe from Cookpad, which is Japanese cooking site.
Stir-Fried Celery with Egg and Dried Shrimp (玉子と海老のセロリ炒め)


Ingredients
1 tablespoon of dried shrimp
 2 tablespoons of sesame oil
6 sticks of celery (Cut them into one and half inches)
 2 beaten eggs (Mix with 1 teaspoon of mirin)
1 teaspoon of Chinese soup stock
1 teaspoon of sake
1 teaspoon of soy sauce
1 teaspoon of vinegar
1 teaspoon of sugar
a pinch of salt and pepper


 1. Heat a pan over high heat and stir-fry dried shrimp without oil.

 2. Add sesame oil into pan, and add celery, salt, and pepper. Then, stir-fry them until all celery are coated with the oil.

3 . Add mixed beaten egg onto pan and make scrambled egg.

Recipe : Fried Green Bok Choy with Eggs (チンゲンサイの卵炒め)

     I referred this receipe on Japanese cooking site, Cookpad.

      I uploaded my YouTube video, How to Cook Fried Green Bok Choy with Eggs.




Ingredients

2 tablespoons of vegetable oil
4 beaten eggs
1 tablespoon of sugar
1 teaspoon of salt
2 lb of green bok choy
2 tablespoons of sake
1 teaspoon of Chinese soup stock
1 tablespoon of oyster sauce
1 tablespoon of potato starch (Mix starch with 1 tablespoon of water)


1. Mix beaten eggs, sugar, and salt. Then, heat oil into a pan over high heat, and fry mixed beaten eggs. Then, move the eggs onto a dish.

2. Put green bok choys onto pan, and add sake. Cover the lid, and cook for 5 minutes or so.

3. Add Chinese soup stock and oyster sauce. Mix them thoroughly. Then, add cooked egg. Finally, add starch and water into pan, and stir them thoroughly.

Recipe : Agedashi Tofu (揚げ出し豆腐)


Agedashi Tofu (揚げ出し豆腐)

Ingredients
 
14 oz of soft tofu (cut the tofu into bite size)
3 tablespoons of potato starch
3 tablespoons of vegetable oil
2 teaspoon of grated ginger
4 tablespoons of mirin (Japanese sweet cooking rice wine)
4 tablespoons of soy sauce
1 cup of water
1 tablespoon of hondashi
1/2 cup of sliced green onion


1. Coat tofu with potato starch.
2. Heat oil in a pan, and place tofu in the pan. Make sure that tofu does not touch each other.
3. Flip tofu to brown both sides.
4. Add ginger, mirin, soy sauce, water, and hondashi into the pan.
5. Turn off the heat when water has boiled.
6. Put tofu on a plate.
7. Put green onion on top of that.
8. Enjoy!

Spicy Teriyaki Chicken Wings with Sriracha (スリラッチャでピリ辛照り焼きチキン)




Ingredients

3 lb of chicken wings
2 tablespoon of vegetable oil
4 tablespoon of sake (Japanese alcohol)
2 tablespoon of soy sauce
2 tablespoon of sugar
2 tablespoon of mirin (Japanese sweet cooking rice wine)
4 tablespoon of sriracha
1 cup of water
2 tablespoon of grated garlic


1.  Heat oil on a pan over high heat, and fry chicken thoroughly. Cover the lid.


 2. Add sake, soy sauce, sugar, mirin, sriracha, garlic, and water into the pan. Cover the lid but leave a small space for water evaporation. Flip chicken to macerate thoroughly.
 


 3. Turn off the heat when the water has evaporated and the sauce has thickened.

Recipe : Kaisen-tororo Don (海鮮とろろ丼)


 Ingredients for two serving

two servings of cooked rice
1/2 pound of grated nagaimo
1/2 pound of tuna negi toro or sliced tuna
 1 pack of sea urchin (or whatever sashimi you like)
a little bit of sliced green onion
2 tablespoon of soy sauce
a little bit of wasabi


1. Serve cooked rice in a bowl.
2. Put grated nagaimo on the top of the rice.
3. Add tuna, sea urchin, and green onion on the bowl.
4. Mix soy sauce and wasabi, and put them on the bowl.
5. Enjoy. :)

Italian Espresso with a Bialetti Moka Express (ビアレッティ・モカ・エキスプレスでエスプレッソ)






1. Add water to the fill line of the bottom pot.


2. Fit the filter back into the bottom pot. Fill the filter with four tablespoon of ground espresso coffee. (My Bialetti Moka Express is for 9 cups.)


3. Screw the two pots together.


4. Heat the pot over medium heat. The coffee begins to brew and is filled into the pot.




5. Turn off the heat.


6. Enjoy!

Ingredients

1 lb of chicken (cut the chicken into bite size)
1 lb of Japanese pumpkin (cut the pumpkin into bite size)
1 lb of sliced onion
1 tablespoon of grated garlic
1 tablespoon of butter
2 tablespoon of flour
1 can of chopped tomato
50 ml of sake
1 cup of water
1 cup of milk
1 tablespoon of sugar
1 tablespoon of chicken broth powder
nip of salt and pepper


1.  Heat butter into a pan over high heat, and fry chicken thoroughly.
2. Add garlic, pumpkin, and onion, and fry them.
3. Add flour and mix thoroughly.
4. Add tomato, sake, water, milk, sugar, and chicken broth. Reduce heat to low and simmer until pumpkin become cooked and tender.
5. Add nip of salt and pepper.
6. Enjoy

Duritos (Duros, Pasta Para Duros, Churritos)
Ingredients

duritos
lime
cilantro (chopped)
hot sauce

1. Place duritos in sufficiently heated oil. Duritos start puffing up and floating.
     It takes only 5 seconds or so to be fully cooked.

2. Season with lime juice, cilantro and hot sauce.

3. Enjoy!

1/3 cup of plain yogurt
2 teaspoon of vinegar

1. Mix all ingredients in a blender.
2. Add as much sugar as you wish.
3. Enjoy!
